Sweet potatoes have been a staple in my household ever since I was little. My dad is from the South, so every Thanksgiving, Christmas, or other special occasion, there were always sweet potatoes (or candied yams) on the table — soft and covered in brown sugar, maple syrup, and butter.
I love sweet potatoes in any form — be it fries, simply baked, roasted, or mixed in a sweet potato pie. So when I saw Rachel, our culinary producer, whip up this melting sweet potato recipe, I was intrigued and knew I had to try this new method STAT. Let’s just say I wasn’t disappointed, and you won’t be either.
